Happy Holidays (and the Best Ginger Cookies)!

holly christmasBefore I sign off this week, I want to wish a Merry Christmas to those who celebrate, and a Happy New Year to all!

I also wanted to share the recipe for some excellent soft ginger snaps I made over the weekend.  They were so yummy that the guests for whom I served them actually made a batch of their own the next day – high praise!

You can find the recipe here, from The Ginger People, a company that makes the best ginger products out there.  (And no, I don’t get compensated for saying things like that, but if The Ginger People are listening and want to bestow many delicious ginger gifts upon me . . .  :-)  )

My cooking notes:  I added a good two tablespoons or so more chopped crystallized ginger than called for, just because I love it so much (I’ve been known to eat an entire bag of crystallized ginger by itself) and I also recommend checking the cookies a minute or two before the eight minute mark, especially if you like a softer cookie.

For whatever reason, ginger always reminds me of Christmas. Ginger snaps, ginger cookies, ginger tea–it just has a ring of winter holidays for me.

By the way, “The Ginger People” sounds like a movie about redheads, haha! Great post and happy holidays to you!
