Well, in this season of giving thanks, I wanted to express how grateful I am to YOU, Lunch Tray readers, for finding and reading this blog, for sharing my posts via Facebook and Twitter, for leaving great, thought-provoking comments every day, and just generally making this project so rewarding.

I enjoy your blog very much, and what most impresses me is your sincerity: you are genuinely struggling with the conflict between providing kids with heathy foods and allowing them to have treats and snacks. That’s something all good parents struggle with, but you are extending your care and concern to all kids who eat their meals at school. I love what you did for Halloween, because it was still fun and in the spirit of the tradition, without compromising your principles. I am thankful for entertaining and conscientious bloggers who are bringing to light issues like this with humor and intelligence.

Laura N: Thank you for that! I’ve been thinking lately that I really need to do a post on my feeling of dejection these days, as my kids seem to be on a stubborn anti-fresh-fruit-and-vegetable streak. I definitely do NOT claim to have all the answers, that’s for sure. 🙂

Have you read anything by Prudence Macintosh? She wrote hilarious books about parenting issues, including the vegetables-versus-cake battle, and I remember one line about how proud she was that for the first 18 months of her son’s life, he thought cucumber slices were cookies. Alas, it never lasts!

I have a recipe that I make every year at this time
Pumpkin crisp. I got it off of a recipe site a number of years ago.
Ingredients
1 (18.25 ounce) package yellow cake mix
1 egg
1/2 cup butter, melted
1 (29 ounce) can pumpkin puree
2 eggs
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 cup white sugar
2/3 cup evaporated milk
3/4 cup white sugar
1/2 cup butter, softened
Directions
Preheat oven to 350 degrees F (175 degrees C). Set aside 1 cup cake mix for the topping. Combine remaining cake mix, 1 egg, and melted butter or margarine. Pat into a 9×13 inch baking pan.
In a large bowl, mix pumpkin, 2 eggs, spices, 1/2 cup sugar, and milk. Pour pumpkin mixture over the cake mix crust.
In a small bowl, combine 1 cup cake mix and 3/4 cup sugar. Cut in 1/2 cup softened butter until mixture resembles coarse crumbs. Sprinkle mixture on top of pumpkin mixture.
Bake at 350 degrees F (175 degrees C) for 55 minutes.

I live in Denmark where the food issues are quite different (and where Thanksgiving is not celebrated!) but I read your blog to keep abreast of school food issues in the USA. As per brussels sprouts, I used to dislike them, but now I love them – for example, gently cooked Brussels sprouts, sautéed leeks in butter, and toasted pecans make for a terrific pasta sauce.

My daughter’s only one but I think it’s good to think now about her eating habits and how I will handle her school lunches in the future so I can be healthy and intentional about them.

I’m also thankful my (6yo) daughter loves vegetables. She’s decided she’s going to eat nothing but vegetables and fruit for the week after Thanksgiving. I have no idea why, lol. And we’ll see. Sometimes her ideas don’t exactly pan out as she planned.
